- Prepare the crust by mixing flour, sugar, and salt in a bowl. Cut in cold butter until coarse crumbs form. Gradually add cold water until dough comes together. Chill for at least 2 hours.
- Make the filling by tossing chopped apples with lemon juice, sugar, cornstarch, salt, and spices. Let it sit for about 15 minutes.
- Preheat oven to 375°F (190°C). Roll out larger dough portion to fit the jelly roll pan, then add apple filling. Roll out second dough for top crust and seal the edges.
