Ingredients

  • 1 1/2 cups strong brewed coffee cooled
  • 2 tablespoons cherry liqueur or cherry juice
  • 1 1/2 cups canned tart cherries drained (reserve some juice)
  • 1/4 cup cherry jam or preserves
  • 1 vegan chocolate sponge cake or 24 vegan ladyfingers
  • 1 1/2 cups full-fat coconut cream chilled overnight
  • 1/2 cup vegan cream cheese or plant-based mascarpone
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Dark chocolate shavings for garnish
  • Extra cherries for topping optional

Method

  1. Make the Cherry Filling:In a bowl, mix drained cherries with cherry jam and 2 tablespoons of the reserved cherry juice or cherry liqueur. Set aside to soak.
  2. Prepare the Coffee Soak:In a shallow dish, combine brewed coffee with remaining cherry liqueur or juice. Let cool completely.
  3. Whip the Cream Layer:In a mixing bowl, beat chilled coconut cream until fluffy. Add vegan cream cheese, powdered sugar, and vanilla extract. Whip until smooth and creamy.
  4. Assemble the Tiramisu:Dip slices of chocolate sponge or ladyfingers quickly into the coffee mixture. Line the bottom of a dish with the soaked sponge. Top with half the cherry mixture and then half the coconut cream layer.
  5. Repeat Layers:Add another layer of dipped sponge, followed by the rest of the cherries and the remaining cream layer.
  6. Chill:Cover and refrigerate for at least 4 hours or overnight for best results.
  7. Serve:Garnish with dark chocolate shavings and fresh cherries before serving.

Notes

  • Chill the coconut cream overnight for the thickest, most luxurious texture.
  • Substitute vegan yogurt for cream cheese for a tangier, lighter filling.
  • Store leftovers in the fridge for up to 3 days—perfect for make-ahead entertaining.
