These Fudgiest Gluten-Free Brownie Cookies are rich, chocolatey, and unbelievably gooey. Made without flour but full of deep cocoa flavor, they’re a chocoholic’s dream in cookie form.

Ingredients
  

  • 2 cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • ¼ tsp salt
  • 2 large egg whites
  • 1 tsp vanilla extract
  • ½ cup chocolate chips

Method
 

  1. Preheat oven to 350°F and line a baking sheet with parchment.
  2. In a bowl, whisk powdered sugar, cocoa powder, and salt.
  3. Add egg whites and vanilla, mixing until a thick batter forms.
  4. Fold in chocolate chips.
  5. Drop spoonfuls onto the baking sheet and bake for 10–12 minutes.
  6. Let cool completely on the baking sheet.

Notes

  • These cookies will be very soft right out of the oven—cool fully to set.
  • Use dairy-free chocolate chips for a fully dairy-free version.
