Method
- In a skillet, brown the sausage with onion and garlic. Drain excess grease.
- Transfer sausage mixture to crockpot. Add broth, tomatoes, and seasonings. Stir to combine.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- Add tortellini and spinach. Cook on high for 15–20 minutes.
- Stir in cream before serving. Top with Parmesan if desired.
Notes
- Add a pinch of red pepper flakes for a little heat.
- Great for freezing before adding tortellini and cream.
