Ingredients
  

  • 2 lbs beef sirloin or flank steak sliced into thin strips
  • 2 bell peppers any color, sliced
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes
  • ¼ cup low-sodium soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp ground ginger
  • ½ tsp black pepper
  • 1 tbsp cornstarch mixed with 2 tbsp water optional, for thickening

Method
 

  1. Place the beef, bell peppers, and onion into the slow cooker.
  2. Add garlic, diced tomatoes (with juices), soy sauce, Worcestershire sauce, ginger, and black pepper. Stir to combine.
  3. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until beef is tender.
  4. If a thicker sauce is desired, stir in the cornstarch slurry and cook for an additional 15–20 minutes.
  5. Serve hot over rice or noodles.

Notes

  • Add a dash of red pepper flakes for a spicy kick.
  • You can substitute the soy sauce for coconut aminos for a gluten-free option.
