Ingredients
  

  • 2 lbs boneless skinless chicken thighs or breasts
  • 1/2 cup honey
  • 1/4 cup soy sauce low sodium recommended
  • 1/4 cup ketchup
  • 4 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon crushed red pepper flakes optional
  • Salt and black pepper to taste
  • 1 tablespoon cornstarch + 2 tablespoons water for thickening, optional
  • Chopped green onions and sesame seeds for garnish
  • Cooked rice or noodles for serving

Method
 

  1. Add Ingredients: Place chicken in the slow cooker. In a small bowl, mix honey, soy sauce, ketchup, garlic, ginger, vinegar, sesame oil, and red pepper flakes. Pour sauce over the chicken.
  2. Cook: Cover and cook on low for 6 hours or high for 3-4 hours until the chicken is tender.
  3. Thicken Sauce (Optional): Remove chicken and set aside. In a small bowl, whisk cornstarch with water and stir into the sauce. Cook on high for another 15 minutes or until thickened. Return chicken to the pot and coat with sauce.
  4. Serve: Garnish with green onions and sesame seeds. Serve over rice or noodles.

Notes

  • Chicken thighs stay moist and flavorful, but you can use chicken breasts for a leaner version.
  • Adjust sweetness by using a little less honey or adding a splash of lime juice.
  • Great for meal prep—leftovers reheat beautifully!
