  1. Begin by placing the boneless skinless chicken thighs at the bottom of your slow cooker. Spread evenly for better cooking.
  2. Pour in the low-sodium chicken broth and soy sauce over the chicken. Add minced garlic and freshly grated ginger. Stir gently.
  3. Chop the red bell pepper, matchstick carrots, and broccoli into bite-sized pieces. Add these vibrant vegetables to the slow cooker and mix.
  4. Cover the slow cooker and set it to low heat. Allow to cook for 6 to 8 hours until the chicken is tender.
