- Generously season the chuck roast with salt and pepper on all sides. Set the roast aside while you prepare to sear it.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Sear the chuck roast for 3-4 minutes on each side until a golden crust forms. Transfer it to your crock pot.
- Layer the bottom of the Crock Pot with chopped onion, minced garlic, carrot chunks, and diced potatoes. Place the seared chuck roast on top.
- Pour 2 cups of beef broth and 1 tablespoon of Worcestershire sauce over the roast and vegetables. Add optional ingredients if desired.
- Cover the Crock Pot and cook on low heat for 8-10 hours, or on high for 4-6 hours.
- Once finished, remove the roast and vegetables from the pot. Allow the roast to rest for 10-15 minutes before slicing or shredding.
