  • 1/4 cup Apple Cider Vinegar White vinegar can be used in a pinch
  • 1 teaspoon Ground Ginger Fresh ginger is a great substitute
  • 1/4 cup Honey Adjust based on sweetness preference
For the Heat & Flavor
  • 1/2 teaspoon Red Pepper Flakes Adjust to taste
  • 3 cloves Garlic Minced, fresh is preferable
For Thickening
  • 1 tablespoon Cornstarch Make a slurry with water
  • 2 tablespoons Water For the cornstarch slurry
For Garnish
  • 2 tablespoons Green Onions Chopped, can substitute with chives

Step-by-Step Instructions
  1. Trim any excess fat from the chicken thighs and cut them into bite-sized pieces. Set aside.
  2. In a large bowl, whisk together the light brown sugar, soy sauce, bourbon, apple cider vinegar, ground ginger, honey, red pepper flakes, and garlic until well combined.
  3. Place the chicken pieces in the crock pot and pour the sauce over them, ensuring all chicken surfaces are coated.
  4. Cover and cook on low for 4 to 6 hours or high for 2 to 3 hours until chicken is tender.
  5. To thicken the sauce, mix cornstarch with water to create a slurry and stir it into the sauce 30 minutes before serving.
  6. Serve over warm rice and garnish with chopped green onions.
