  • 2 medium Zucchini Grated and moisture removed
  • 200 grams Feta Cheese Crumbled
  • 1 large Egg Beaten
  • 100 grams Breadcrumbs Use gluten-free if necessary
For Flavor
  • 50 grams Fresh Parsley Chopped
  • 2 cloves Garlic Minced
  • 1 teaspoon Dried Oregano
  • to taste Salt
  • to taste Pepper
For Texture
  • 50 grams Oats Optional
  • 3 tablespoons Olive Oil For drizzling

Method
 

Preparation Steps
  1. Wash and grate the zucchini. Wrap in a towel and squeeze out excess moisture. Set aside.
  2. In a mixing bowl, combine zucchini, feta, egg, breadcrumbs, and optional oats. Add parsley, garlic, oregano, salt, and pepper. Mix until combined.
  3. Form the mixture into golf ball-sized balls and place them on a plate.
  4. Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper and arrange balls evenly. Drizzle olive oil on top.
  5. Bake for 20 minutes, flipping halfway through until golden brown.
  6. Allow to cool for a few minutes before serving with tzatziki sauce or your favorite dip.
