Ingredients

For the Batter
  • 500 g Oyster Mushrooms The star of the show; tender texture mimics chicken.
  • 1 cup Plain All-Purpose Flour Provides the crunchy exterior; swap with gluten-free flour if desired.
  • 1 tbsp Baking Powder Essential for light, airy batter.
  • 1 cup Nutritional Yeast Adds cheesy, savory flavor.
  • 1 cup Soy Milk Acts as a binding agent; use unsweetened.
For the Spice Mix
  • 1 tsp Garlic Salt Brings depth and savory flavor.
  • 1 tsp Onion Powder Enhances aroma with warm taste.
  • 1 tsp Paprika Adds vibrance and subtle heat.
  • 1 tbsp Dried Herbs Such as oregano or thyme for aromatic finish.
For Frying
  • 2 cups Oil for Frying Use neutral oils like vegetable or canola.

Equipment

  • Non-stick saucepan
  • Mixing bowl
  • Whisk
  • Tray

Method

Step‑by‑Step Instructions
  1. Start by gently washing the oyster mushrooms under cool running water, then pat them dry with a clean kitchen towel. Tear larger mushrooms in half.
  2. In a large mixing bowl, combine all the dry ingredients: garlic salt, onion powder, paprika, and dried herbs. Whisk together until blended and set aside 80g for later.
  3. In a separate bowl, pour in the soy milk and gradually add the reserved spice mix along with nutritional yeast. Whisk until smooth and lump-free.
  4. Dip each mushroom piece into the batter, ensuring it's thoroughly coated, then roll them in the remaining dry spice mix. Let rest for 10 minutes.
  5. Heat oil in a saucepan over medium-high heat until it reaches around 180°C (350°F). Test with batter; if it sizzles, add mushrooms.
  6. Fry mushroom pieces for 5 to 7 minutes, turning occasionally until golden brown and crispy.
  7. Transfer fried mushrooms to a plate lined with absorbent paper to drain excess oil and cool for 5-10 minutes.
  8. Serve hot with a splash of lime juice and your favorite dipping sauces.
