Ingredients
  

  • 1 cup sweet potato grated
  • 1 cup shrimp peeled and deveined, chopped
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup green onions chopped
  • 1/2 cup water adjust as needed
  • Vegetable oil for frying

Method
 

  1. In a large mixing bowl, combine the grated sweet potato, chopped shrimp, all-purpose flour, cornstarch, baking powder, salt, and black pepper. Mix well until all ingredients are evenly distributed.
  2. Gradually add water to the mixture, stirring until a thick batter forms. The batter should be thick enough to hold its shape but not too dry. Adjust the water as needed.
  3. Fold in the chopped green onions until evenly mixed.
  4. Heat about 1/2 inch of vegetable oil in a large skillet over medium heat. Once the oil is hot, drop spoonfuls of the batter into the oil, flattening them slightly with the back of the spoon.
  5. Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy. Remove them from the skillet and place them on a paper towel-lined plate to drain excess oil.
  6. Serve hot with your favorite dipping sauce.
