Ingredients
  

For the Crispy Rice:
  • 2 cups sushi rice cooked and cooled
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil for frying
For the Salmon Topping:
  • 1/2 pound fresh sushi-grade salmon finely diced
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha sauce adjust to taste
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon lime juice
  • 1 teaspoon chopped green onions
  • 1 teaspoon sesame seeds optional
For Garnish:
  • Sliced avocado
  • Extra sesame seeds
  • Extra green onions

Method
 

  1.  
  2. In a bowl, combine diced salmon, mayonnaise, sriracha, soy sauce, sesame oil, lime juice, green onions, and sesame seeds. Mix well.
Assemble:
  1. Spoon a small amount of the salmon mixture onto each crispy rice square.
  2. Garnish with sliced avocado, extra green onions, and sesame seeds.
Serve:
  1. Serve immediately while the rice is still crispy.
