  • 2 cans 14.75 oz each pink salmon, drained and flaked
  • 1/2 cup breadcrumbs plain or seasoned
  • 2 large eggs
  • 1/4 cup finely chopped onion
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley optional
  • 2 tablespoons olive oil for frying

Method

  1. Make the Mixture: In a large bowl, combine salmon, breadcrumbs, eggs, onion, mustard, lemon juice, garlic powder, paprika, salt, pepper, and parsley. Mix until well combined.
  2. Form Patties: Shape the mixture into 6-8 equal-sized patties.
  3. Cook the Patties: Heat olive oil in a skillet over medium heat. Cook patties for 3-4 minutes per side, or until golden brown and crispy.
  4. Serve: Remove and drain on paper towels. Serve hot with a dipping sauce, fresh lemon wedges, or alongside your favorite sides.

Notes

  • You can substitute breadcrumbs with crushed crackers or panko for a different texture.
  • Add chopped bell peppers, celery, or green onions for more crunch and flavor.
  • These patties are freezer-friendly—just let them cool completely and freeze for up to 2 months.
  • Serve with tartar sauce, aioli, or a squeeze of sriracha mayo for a flavor boost.
