  1. Preheat your oven to 200°C (400°F, 180°C fan-forced).
  2. Gather your ingredients and mix parmesan, garlic powder, oregano or thyme, paprika, salt, and pepper in a bowl.
  3. Drizzle olive oil in a glass baking dish and spread evenly.
  4. Sprinkle the parmesan mixture over the oiled surface of the baking dish.
  5. Place halved baby potatoes cut-side down in the dish, pressing down gently.
  6. Lightly drizzle more olive oil over the tops of the potatoes and sprinkle with a bit of salt.
  7. Bake for 35-40 minutes until fork-tender and golden-brown.
  8. Let the potatoes rest for 5 minutes, then serve immediately.
