Preheat your oven to 400°F.
Prepare the chicken breasts by placing each between two pieces of plastic wrap and pounding to an even thickness of about 1/2 inch.
Set up a breading station with flour in one dish, whisked eggs in a second dish, and a mixture of breadcrumbs, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper in a third dish.
Dredge each chicken breast in flour, dip in egg, and coat in the breadcrumb mixture.
Heat olive oil in a large oven-safe skillet over medium heat and cook the breaded chicken for about 4-5 minutes on each side until golden brown.
Remove the chicken and set aside. In the same skillet, sauté minced garlic for about 30 seconds, then add chicken broth and bring to a simmer.
Return the chicken to the skillet, spoon garlic sauce over it, and transfer to the oven. Bake for 15-20 minutes until the chicken reaches an internal temperature of 165°F.
Let it rest for a few minutes before garnishing with fresh parsley and serving.
