Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
  2. Peel and chop the butternut squash into bite-sized cubes and toss them in a bowl with olive oil, honey, salt, and black pepper.
  3. Spread the squash mixture on the baking sheet and roast for 25-30 minutes, tossing halfway through.
  4. Remove from the oven and sprinkle cranberries over the hot squash, followed by the crumbled feta.
  5. Sprinkle pumpkin seeds on top and return to the oven for an additional 5 minutes.
  6. Let cool for a few minutes, then transfer to a serving platter and enjoy.
