Step-by-Step Instructions
  1. Begin by prepping your enoki mushrooms for frying. Gently trim the dirty ends with a sharp knife, then slice them into 1/4 inch pieces.
  2. In a deep pot, heat 2-3 inches of neutral oil to 375°F (190°C) using a frying thermometer.
  3. In a large mixing bowl, combine all-purpose flour, potato starch, baking powder, salt, white pepper, garlic powder, paprika, cayenne pepper, and five-spice powder. Gradually whisk in cold sparkling water until smooth.
  4. Dip and coat sliced enoki mushrooms in the batter, allowing excess to drip off.
  5. Carefully lower the battered enoki mushrooms into the hot oil in batches and fry for 1-2 minutes until golden brown.
  6. Once fried, sprinkle with salt and serve immediately with dipping sauces like soy sauce or lemon juice.
