Ingredients
  

For the Chicken:
  • 4 small-medium chicken breasts or 2 large, halved
  • Salt and pepper to taste
  • 2 tablespoons olive oil
For the Creamy Garlic Sauce:
  • 3-4 cloves garlic minced
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • ½ cup parmesan cheese grated
  • 1 cup spinach chopped (optional)

Method
 

  1. Sear the Chicken – Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown, then remove from the pan.
  2. Make the Sauce – In the same pan, sauté the garlic for 30 seconds until fragrant. Pour in the cream and add Italian seasoning. Let simmer for 2-3 minutes.
  3. Stir in Parmesan & Spinach – Add the grated parmesan, stirring until melted and smooth. If using spinach, stir it in and let it wilt into the sauce.
  4. Combine Everything – Return the chicken to the skillet, coating it in the creamy sauce. Let it simmer for 3-4 minutes until fully heated through.
  5. Serve & Enjoy – Serve hot over pasta, rice, or mashed potatoes, garnished with extra parmesan if desired.

Notes

    • For a lighter version: Use half-and-half instead of heavy cream.
    • For extra depth of flavor: Add a splash of white wine or chicken broth to the sauce.
    • Storage & Reheating: Store leftovers in the fridge for up to 3 days. Reheat gently on the stovetop over low heat.
