Ingredients
  

  • large shrimp peeled and deveined
  • eggs
  • flour
  • unsweetened shredded coconut
  • panko breadcrumbs
  • salt
  • pepper
  • vegetable oil for frying

Method
 

  1. Pat shrimp dry and season with salt and pepper
  2. Set up a dredging station: flour, beaten eggs, and coconut mixed with panko
  3. Dip shrimp in flour, then egg, then coconut mixture
  4. Fry in hot oil until golden and crispy, about 2–3 minutes per side
  5. Drain on paper towels and serve warm

Notes

  • Use sweetened coconut for a more dessert-like flavor
  • Air fry for a healthier version
  • Great with chili sauce or pineapple salsa
