For the Tofu
  • 1 block Extra-Firm Tofu Press to remove excess water
  • 1/2 cup Cornstarch Can swap with arrowroot starch for gluten-free
  • 1 cup Panko Breadcrumbs Use fresh for best results
  • 1 teaspoon Garlic Powder Adjust according to preference
For the Sauce
  • 1/2 cup Vegan Mayonnaise Can replace with regular mayo if desired
  • 2 tablespoons Sriracha Use sweet chili sauce for a gentler heat
  • 1 tablespoon White Sugar Can use maple syrup or agave for sweetness
  • 1/2 teaspoon Salt Sea salt or kosher salt works well

Method
 

Step-by-Step Instructions
  1. Remove extra-firm tofu from packaging and drain excess water. Wrap in a kitchen towel and place a weight on top to press for 5 minutes.
  2. Unwrap tofu and slice into approximately 1-inch cubes, aiming for 32 cubes.
  3. Preheat the oven to 400ºF (200ºC).
  4. In a large bowl, combine cornstarch, panko breadcrumbs, and garlic powder. Toss tofu cubes in this mixture until fully coated.
  5. Spread coated tofu cubes on a parchment-lined baking sheet. Bake for 40 minutes, flipping halfway.
  6. Prepare sauce by combining vegan mayonnaise, sriracha, white sugar, and salt in a bowl. Stir until smooth.
  7. Once baked, toss the crispy tofu with the prepared sauce until generously coated.
  8. Serve over Coconut Cilantro Rice or Pearl Couscous, garnished with red pepper flakes and scallions.
