Method
- Season chicken with salt and pepper. Sear in olive oil in a large skillet until golden and cooked through; remove and set aside.
- In the same skillet, sauté garlic until fragrant.
- Add cream, broth, and Parmesan. Stir until combined.
- Add sun-dried tomatoes and spinach.
- Simmer until spinach wilts.
- Return chicken to the skillet and simmer for 2–3 minutes.
- Serve with pasta or crusty bread.
Notes
- Great with mashed potatoes or zucchini noodles.
- Add red pepper flakes for heat.
