Method
- Cook tortellini and reserve ½ cup of pasta water.
- In a pan, cook bacon until crispy. Remove and set aside.
- In a bowl, whisk eggs, parmesan, and pepper.
- Add cooked tortellini to the pan with a splash of pasta water.
- Remove from heat and stir in egg mixture quickly.
- Add bacon and garnish with parsley.
Notes
- Work fast when combining eggs to prevent scrambling.
- Add peas or mushrooms for variation.
- Use pancetta instead of bacon if preferred.
- Top with extra parmesan for richness.
