Tortellini Carbonara puts a rich and cheesy spin on a classic. Bacon, eggs, parmesan, and black pepper create a creamy carbonara-style sauce that coats every bite of stuffed tortellini.

Ingredients
  

  • Cheese tortellini
  • Bacon chopped
  • Eggs
  • Parmesan cheese
  • Black pepper
  • Salt
  • Garlic optional
  • Chopped parsley

Method
 

  1. Cook tortellini and reserve ½ cup of pasta water.
  2. In a pan, cook bacon until crispy. Remove and set aside.
  3. In a bowl, whisk eggs, parmesan, and pepper.
  4. Add cooked tortellini to the pan with a splash of pasta water.
  5. Remove from heat and stir in egg mixture quickly.
  6. Add bacon and garnish with parsley.

Notes

  • Work fast when combining eggs to prevent scrambling.
  • Add peas or mushrooms for variation.
  • Use pancetta instead of bacon if preferred.
  • Top with extra parmesan for richness.
  • Serve immediately for best texture.
