  • 8 ounces Penne Pasta Any pasta type can be used.
For the Sauce
  • 2 tablespoons Grass-fed Butter Can replace with oil for dairy-free option.
  • 1 cup Heavy Cream Light cream can be used for lower calories.
  • 0.5 cup Freshly Grated Parmesan Cheese Nutritional yeast is a great vegan substitute.
  • 2 pieces Chipotle Peppers in Adobo Sauce Adjust based on heat preference.
  • 1 teaspoon Paprika Optional.
  • 0.25 teaspoon Cayenne Pepper Optional for extra heat.
For the Vegetables
  • 2 tablespoons Avocado Oil Extra virgin olive oil can be used.
  • 1 cup Bell Peppers (Red/Yellow) Any sweet pepper works.
  • 1 cup Fresh Raw Asparagus Substitute with broccoli or cauliflower as desired.

For Seasoning
  • 1 teaspoon Salt

For Garnish
  • 0.25 cup Shaved Parmigiano
  • 2 tablespoons Chopped Fresh Parsley/Cilantro For a fresh finish.

Method
 

Instructions
  1. Prepare Chicken: Season chicken with salt and pepper. Heat a skillet over medium-high heat, add avocado oil, cook chicken for about 6-7 minutes until golden. Drizzle honey during last minute, slice into strips.
  2. Cook Pasta: Boil salted water in a large pot, add penne pasta and cook according to package instructions, generally around 9-11 minutes. Reserve about a cup of pasta water before draining.
  3. Sauté Vegetables: In the same skillet, lower heat, add butter and a drizzle of oil, then onion. Sauté until translucent. Stir in garlic, bell peppers, and asparagus; cook until tender, about 5 minutes.
  4. Make Sauce: Blend heavy cream, chipotle peppers, paprika, and parmesan in a blender until smooth. Pour into skillet with vegetables. Gradually stir in reserved pasta water, simmer until sauce thickens, around 3-4 minutes.
  5. Combine: Add cooked pasta and sliced chicken to the skillet, toss gently to coat everything with sauce, cook for an additional minute until heated through.
  6. Serve: Plate the pasta, garnish with shaved Parmigiano and fresh herbs. Best enjoyed warm, optionally with garlic bread.
