- Halve the ripe tomatoes and place them cut-side up on a baking sheet. Drizzle with olive oil, salt, and pepper. For garlic, slice the top off, drizzle with olive oil, wrap in foil, and place on the baking sheet.
- Roast in the oven for about 30-35 minutes until caramelized and juicy.
- While roasting, heat olive oil in a large pot over medium heat and sauté chopped onion until translucent, about 5 minutes.
- Remove roasted garlic from skins and add it with tomatoes, vegetable broth, and fresh basil to the pot. Blend until smooth using an immersion blender.
- Return the mixture to the stove and bring to a simmer. Stir in heavy cream and simmer for an additional 5-10 minutes, adjusting seasoning as needed.
