Step-by-Step Instructions

  2. Halve the ripe tomatoes and place them cut-side up on a baking sheet. Drizzle with olive oil, salt, and pepper. For garlic, slice the top off, drizzle with olive oil, wrap in foil, and place on the baking sheet.
  3. Roast in the oven for about 30-35 minutes until caramelized and juicy.
  4. While roasting, heat olive oil in a large pot over medium heat and sauté chopped onion until translucent, about 5 minutes.
  5. Remove roasted garlic from skins and add it with tomatoes, vegetable broth, and fresh basil to the pot. Blend until smooth using an immersion blender.
  6. Return the mixture to the stove and bring to a simmer. Stir in heavy cream and simmer for an additional 5-10 minutes, adjusting seasoning as needed.
