Method
- Preheat oven to 325°F. Mix graham cracker crumbs, sugar, and melted butter. Press into bottom of a springform pan. Bake for 10 minutes.
- In a large bowl, beat cream cheese until smooth. Add sugar and vanilla. Mix in eggs one at a time.
- Stir in sour cream and heavy cream until combined.
- Pour over crust and bake for 1 hour or until center is just set.
- Turn off oven, crack door, and let cheesecake sit for 1 hour. Chill for at least 4 hours or overnight.
- Serve plain or with fruit topping.
