Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tablespoons melted butter
  • 4 8-ounce packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2/3 cup sour cream
  • 2/3 cup heavy cream

Method
 

  1. Preheat oven to 325°F. Mix graham cracker crumbs, sugar, and melted butter. Press into bottom of a springform pan. Bake for 10 minutes.
  2. In a large bowl, beat cream cheese until smooth. Add sugar and vanilla. Mix in eggs one at a time.
  3. Stir in sour cream and heavy cream until combined.
  4. Pour over crust and bake for 1 hour or until center is just set.
  5. Turn off oven, crack door, and let cheesecake sit for 1 hour. Chill for at least 4 hours or overnight.
  6. Serve plain or with fruit topping.

Notes

  • For best results, use a water bath to prevent cracking.
  • Room temperature ingredients ensure a smooth filling.
