Step-by-Step Instructions
  1. In a large, heavy saucepan, gently heat 150ml of golden syrup over medium heat until it becomes runny, about 2–3 minutes.
  2. Stir in 200g of caster sugar and bring the mixture to a boil. Let it bubble for 3 minutes, swirling occasionally.
  3. Remove from heat and quickly add 1 teaspoon of bicarbonate of soda, stirring continuously until fully dissolved.
  4. Pour the honeycomb mixture into a lined baking tin and spread out gently with a spatula. Allow to cool and set for about 1 hour.
  5. While your honeycomb cools, whip 500ml of heavy cream in a large bowl to soft peaks using an electric mixer, about 3–5 minutes.
  6. Fold in 397g of sweetened condensed milk gently until thickened and well combined.
  7. Chop cooled honeycomb into bite-sized pieces and fold into the ice cream mixture, ensuring even distribution.
  8. Transfer the mix into a lined loaf tin, smoothing the top with a spatula, and cover tightly with plastic wrap.
  9. Place in the freezer and let it sit for at least 6 hours, or until firm.
  10. To serve, let it sit at room temperature for about 5 minutes before scooping.
