- In a large, heavy saucepan, gently heat 150ml of golden syrup over medium heat until it becomes runny, about 2–3 minutes.
- Stir in 200g of caster sugar and bring the mixture to a boil. Let it bubble for 3 minutes, swirling occasionally.
- Remove from heat and quickly add 1 teaspoon of bicarbonate of soda, stirring continuously until fully dissolved.
- Pour the honeycomb mixture into a lined baking tin and spread out gently with a spatula. Allow to cool and set for about 1 hour.
- While your honeycomb cools, whip 500ml of heavy cream in a large bowl to soft peaks using an electric mixer, about 3–5 minutes.
- Fold in 397g of sweetened condensed milk gently until thickened and well combined.
- Chop cooled honeycomb into bite-sized pieces and fold into the ice cream mixture, ensuring even distribution.
- Transfer the mix into a lined loaf tin, smoothing the top with a spatula, and cover tightly with plastic wrap.
- Place in the freezer and let it sit for at least 6 hours, or until firm.
- To serve, let it sit at room temperature for about 5 minutes before scooping.
