Preparation Steps
- Peel and cube the potatoes, then boil for 15-20 minutes until tender. Drain and mash with milk and butter.
- Melt butter in a skillet, add sliced carrots, brown sugar, salt and water, cover and simmer for 10-12 minutes.
- Season chicken and sear in a skillet with olive oil and butter for 4-5 minutes on each side until golden brown.
- Sauté minced garlic in the same skillet, deglaze with chicken broth, then add cream and herbs, simmer for 3-5 minutes.
- Combine cooked chicken with the herb sauce in the skillet for 3-5 minutes until heated through.
- Serve with mashed potatoes and glazed carrots, garnishing with parsley and thyme.
