Ingredients
  

  • 4 salmon fillets about 6 oz each
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 5 cloves garlic minced
  • 1 small shallot finely chopped
  • 1/2 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh lemon juice
  • Fresh parsley or basil chopped (for garnish)

Method
 

  1. Season & Sear: Season salmon fillets with salt and pepper. Heat olive oil in a large skillet over medium heat. Sear salmon skin-side up for about 4-5 minutes per side until golden and cooked through. Remove and set aside.
  2. Make the Sauce: In the same pan, melt butter. Add garlic and shallot, sauté for 1-2 minutes until fragrant.
  3. Deglaze & Simmer: Pour in broth, scraping up any bits from the pan. Let simmer for 2 minutes.
  4. Add Cream & Cheese: Stir in heavy cream, Parmesan, Italian seasoning, and lemon juice. Simmer on low for 3-4 minutes until thickened.
  5. Combine & Finish: Return salmon to the pan, spoon sauce over the fillets, and simmer for another 2-3 minutes.
  6. Serve: Garnish with fresh herbs and serve with mashed potatoes, pasta, or steamed veggies.

Notes

  • Use skin-on salmon for better texture and easier handling while searing.
  • Add spinach or cherry tomatoes to the sauce for extra color and nutrition.
  • To lighten it up, use half-and-half instead of heavy cream (sauce will be slightly thinner).
  • Leftovers keep well for 1-2 days in the fridge, perfect for lunch!
