Method
- Preheat oven to 325°F
- Blend cottage cheese, yogurt, eggs, sweetener, vanilla, lemon zest, and cornstarch until smooth
- Pour mixture into crust and smooth the top
- Bake for 40–45 minutes or until set
- Chill completely before slicing

- Add fresh berries or fruit compote on top
- Use silicone muffin cups for mini cheesecakes
