Step 1: Sauté Chicken
- Melt 2 tablespoons of butter in a large pot over medium heat. Add diced chicken breast and cook for about 5 minutes until golden brown and cooked through.
Step 2: Cook Vegetables
- Add chopped onions, diced carrots, and additional vegetables to the pot. Sauté for 3-4 minutes until softened and fragrant.
Step 3: Add Orzo & Broth
- Incorporate 1 cup of orzo into the pot, stirring well. Pour in 4 cups of chicken broth and bring to a gentle simmer for 2-3 minutes.
Step 4: Simmer
- Reduce heat to low, cover the pot, and simmer for 10-12 minutes, stirring occasionally until orzo is tender and has absorbed most liquid.
Step 5: Incorporate Cream & Seasonings
- Stir in 1 cup of heavy cream and season with salt, pepper, and 1 teaspoon of thyme. Simmer uncovered for 2-3 minutes to thicken the sauce.
