Method
- Add chicken, onion, celery, carrots, garlic, broth, thyme, salt, and pepper to crockpot.
- Cook on low for 6–7 hours or high for 3–4 hours.
- Shred chicken and return to pot. Stir in gnocchi and cook for 30 minutes.
- Add spinach and cream. Heat through and serve.
Notes
- For a thicker soup, stir in a cornstarch slurry before serving.
- Swap spinach with kale for a heartier green.
