Ingredients

  • Jumbo pasta shells
  • Ricotta cheese
  • Shredded mozzarella cheese
  • Grated Parmesan cheese
  • Fresh spinach chopped
  • Large egg
  • Fresh parsley chopped
  • Salt and freshly ground black pepper
  • Marinara sauce
  • Shredded mozzarella cheese for topping

Method

  1. Cook the pasta shells until al dente, then drain and let them cool slightly.
  2. In a mixing bowl, combine ricotta, mozzarella, Parmesan, spinach, egg, parsley, salt, and pepper. Stir until well blended.
  3. Preheat the oven to 375°F (190°C). Spread a layer of marinara sauce on the bottom of a baking dish.
  4. Fill each cooked shell with the cheese mixture and arrange them in the dish.
  5. Pour the remaining marinara sauce over the shells and sprinkle additional mozzarella on top.
  6. Cover with foil and bake for 20 minutes, then remove the foil and bake for another 10 minutes until the cheese is golden and bubbly.
  7. Garnish with extra parsley and serve warm.

Notes

  • Cook the pasta just until al dente to prevent them from becoming too soft.
  • For extra flavor, add a pinch of red pepper flakes to the cheese mixture.
  • This dish can be made ahead and refrigerated for up to 24 hours before baking.
  • To freeze, assemble the shells in a freezer-safe dish, cover tightly, and freeze for up to 3 months.
