For the Vegetables
  • 1 bunch Broccolini or Broccoli Florets Substitute with spinach or asparagus if needed
For the Sauce
  • 2 tablespoons Extra Virgin Olive Oil Avocado oil is an alternative
  • 1 cup Homemade Alfredo Sauce Use coconut milk and vegan cheese for a vegan version
For the Finish
  • 1/2 cup Freshly-Grated Parmesan Nutritional yeast can be used for a dairy-free version
  • 1 tablespoon Fresh Parsley Optional, but recommended for garnish

Equipment

  • large pot
  • Medium Skillet
  • slotted spoon

Method

Cooking Steps
  1. In a large pot, bring salted water to a rolling boil over high heat. Add the organic cheese ravioli and cook according to package instructions, usually 4-5 minutes. Gently scoop them out with a slotted spoon and set aside.
  2. In a medium skillet, heat 2 tablespoons of extra virgin olive oil over medium-high heat. Add the broccolini and sauté for 3-4 minutes until tender. Remove and keep warm.
  3. In the same skillet, lower the heat to medium and add the homemade Alfredo sauce. Warm gently, stirring constantly until creamy, about 3-5 minutes, avoiding boiling.
  4. Once the sauce is warmed, add the cooked ravioli and sautéed broccolini back into the skillet. Toss gently until coated, adjusting texture with warm milk or broth if needed.
  5. Serve on warm plates, garnished with freshly grated Parmesan and parsley. Enjoy with garlic bread and a light salad if desired.

Notes

Use fresh ingredients for the best flavor, and consider making the Alfredo sauce from scratch to enhance taste. Avoid overcooking ravioli to maintain tenderness.
