  • 3 ripe bananas mashed
  • 8 ounces cream cheese softened
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts or pecans optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the mashed bananas, softened cream cheese, and softened butter. Mix until smooth and well combined.
  3. Add the granulated sugar and brown sugar to the banana mixture, and mix until fully incorporated.
  4. Beat in the eggs one at a time, followed by the vanilla extract, mixing well after each addition.
  5. In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. If desired, fold in the chopped walnuts or pecans.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
