  • 3 cloves Garlic Mince
  • 10 oz Mushrooms Cremini or button
  • 8 oz Seitan Thinly sliced
  • 1 tbsp Olive Oil For sautéing
  • 1 tbsp Flour Gluten-free flour can be used
  • 1.5 cups Vegetable Broth Low-sodium recommended
  • 1 cup Dairy-Free Sour Cream Regular sour cream can be used if not vegan
  • 1 tbsp Dijon Mustard
  • 1 tbsp Soy Sauce/Tamari Tamari is gluten-free
  • 1 tsp Smoked Paprika
  • 0.5 tsp Thyme Oregano is a good alternative
For the Pasta
  • 12 oz Egg Noodles or Pappardelle Use vegan pasta for fully plant-based
For Garnish
  • to taste Fresh Parsley Chopped

Step-by-Step Instructions
  1. Begin by preparing your ingredients. Chop the onion finely, mince garlic, and slice mushrooms. Thinly slice seitan for even cooking.
  2. Heat olive oil in a skillet over medium heat. Add chopped onion and sauté for 5 to 7 minutes until soft and translucent.
  3. Stir in minced garlic and cook for another 1 to 2 minutes, until fragrant.
  4. Add sliced mushrooms to the skillet and sauté for 8 to 10 minutes until browned.
  5. Add thinly sliced seitan to the skillet and cook for another 3 to 4 minutes.
  6. Sprinkle flour over the mixture and stir for about 2 minutes to thicken the sauce.
  7. Gradually add vegetable broth while stirring to avoid lumps. Bring to a gentle simmer for 3 to 4 minutes.
  8. Stir in dairy-free sour cream, Dijon mustard, soy sauce, smoked paprika, and thyme. Simmer for 5 to 7 minutes.
  9. Prepare egg noodles or pappardelle according to package instructions.
  10. Toss cooked noodles with the creamy sauce and garnish with parsley. Serve warm.
