Ingredients

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 lb potato gnocchi
  • 6 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried Italian herbs
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves for garnish

Method

  1. Sear the Chicken – Heat olive oil in a large skillet over medium-high heat. Add the chicken, season with salt, pepper, and Italian herbs, and cook until golden brown and fully cooked. Remove from the pan and set aside.
  2. Make the Garlic Cream Sauce – In the same skillet, add minced garlic and sauté until fragrant. Pour in the chicken broth, scraping up any browned bits from the pan. Stir in the heavy cream and bring to a gentle simmer.
  3. Cook the Gnocchi – Add the uncooked gnocchi directly to the sauce, stirring to coat. Let them simmer for 3-4 minutes until they become soft and tender, absorbing the creamy flavors.
  4. Bring Everything Together – Return the cooked chicken to the pan and stir in the grated Parmesan cheese. Let everything simmer for another minute until the sauce thickens and coats every bite.
  5. Garnish and Serve – Remove from heat and top with fresh basil leaves. Serve hot and enjoy this creamy, garlicky delight

Notes

  • Freshly grated Parmesan cheese melts better and adds a richer flavor than pre-packaged versions.
  • If the sauce becomes too thick, add a splash of chicken broth to loosen it up.
  • To add a little heat, sprinkle in some red pepper flakes.
  • Leftovers can be stored in the fridge for up to 3 days. Reheat gently on the stovetop with a bit of extra broth or cream.
