Ingredients
  

  • 3-4 lb corned beef brisket with spice packet
  • 3 cups water
  • 1 onion quartered
  • 4 garlic cloves
  • 1 lb baby carrots
  • lbs potatoes halved
  • ½ head green cabbage cut into wedges

Method
 

  1. Place onion and garlic at the bottom of the crockpot.
  2. Add corned beef on top and sprinkle with included spice packet.
  3. Pour in water until the beef is nearly covered.
  4. Add carrots and potatoes around the beef.
  5. Cover and cook on low for 8-9 hours or high for 4-5 hours.
  6. Add cabbage wedges in the last 2 hours of cooking.
  7. Slice beef against the grain and serve with vegetables.

Notes

  • Add a splash of beer for extra flavor
  • Leftovers make great sandwiches
  • Cut veggies evenly for uniform cooking
