Method
 

Cooking Instructions

  3. Gently fold in half of the shredded cheddar cheese into the rice mixture, then spread it evenly in the prepared baking dish. Lay the chicken on top.
  4. Cover the dish with aluminum foil and bake for about 1.5 to 2 hours, checking for doneness at 90 minutes.
  5. Remove foil, sprinkle remaining cheddar cheese on top, and bake uncovered for an additional 15-20 minutes.
  6. Let the casserole rest for about 15-20 minutes before serving.
