Ingredients
  

  • Beef chuck roast cut into chunks
  • Salt and black pepper to taste
  • Vegetable oil
  • Thick-cut bacon diced
  • Large onions sliced
  • Garlic cloves minced
  • Tomato paste
  • All-purpose flour
  • Guinness beer
  • Worcestershire sauce
  • Brown sugar
  • Beef broth
  • Fresh thyme sprigs
  • Carrots peeled and cut into chunks
  • Yukon Gold potatoes peeled and cut into chunks
  • Fresh parsley chopped (for garnish)

Method
 

  1. Sear the Beef and Cook the Bacon
  2. Season the beef chunks with salt and pepper.
  3. Heat vegetable oil in a Dutch oven over medium-high heat.
  4. Brown the beef in batches, then remove and set aside.
  5. Cook the diced bacon until crispy, then set aside with the beef.
  6. Sauté the Aromatics
  7. In the same pot, add the sliced onions and sauté until soft and caramelized.
  8. Stir in the minced garlic and cook for another minute.
  9. Build the Flavor Base
  10. Mix in the tomato paste and stir well.
  11. Sprinkle the flour over the mixture and cook for 2 minutes to remove the raw flour taste.
  12. Deglaze and Simmer
  13. Pour in the Guinness, scraping the bottom of the pot to lift any browned bits.
  14. Add Worcestershire sauce, brown sugar, and beef broth.
  15. Return the beef and bacon to the pot, along with thyme sprigs.
  16. Slow Cook to Perfection
  17. Stir in the carrots and potatoes.
  18. Cover and let simmer on low heat for about 2 hours until the beef is tender.
  19. Final Touches and Serving
  20. Remove the thyme sprigs.
  21. Taste and adjust seasoning if needed.
  22. Garnish with fresh parsley and serve hot.

  • For a thicker stew, let it simmer uncovered for an additional 20 minutes.
  • If you prefer a non-alcoholic version, substitute Guinness with extra beef broth and a splash of balsamic vinegar.
