  • 12 oz Egg Noodles can substitute with gluten-free pasta
  • 1 Diced Onion yellow or white onions work interchangeably
  • 2 cloves Garlic fresh garlic preferred
  • 1 tsp Italian Seasoning can substitute with oregano and basil blend
  • 1 tsp Salt adjust according to taste
  • 0.5 tsp Pepper adjust according to taste
  • 14.5 oz Diced Tomatoes low-sodium varieties are healthier
  • 10.5 oz Cream of Mushroom Soup can switch with cream of chicken
  • 1 cup Sour Cream Greek yogurt is a great low-fat alternative
  • 0.5 cup Parmesan Cheese can swap for mozzarella for extra cheesiness
For Garnish
  • 0.25 cup Fresh Parsley optional but highly recommended!

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C). Prepare your casserole dish by greasing it lightly.
  2. Bring a large pot of salted water to a boil, then cook the egg noodles for 6-8 minutes until al dente. Drain and set aside.
  3. In a large skillet over medium heat, brown the ground beef with diced onion and minced garlic for 6-8 minutes; drain excess fat.
  4. Stir in the Italian seasoning, salt, and pepper, then add diced tomatoes and cook for an additional 2-3 minutes.
  5. Mix cream of mushroom soup and sour cream in a bowl until smooth.
  6. In your greased casserole dish, layer half of the cooked noodles, half of the beef mixture, and half of the creamy mixture. Repeat.
  7. Sprinkle grated Parmesan cheese over the top layer.
  8. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10-15 minutes until bubbly and golden.
  9. Let the casserole rest for 5-10 minutes before serving. Garnish with freshly chopped parsley if desired.
