  • 1/4 cup baking soda used for boiling to achieve chewy crust
Topping Ingredients
  • 1 large egg, beaten gives a glossy finish
  • 1/2 cup granulated sugar (for topping)
  • 2 teaspoons ground cinnamon infuses flavor

Equipment

  • Mixing bowl
  • large pot
  • Baking sheet
  • parchment paper
  • Wire rack
  • Brush for egg wash

Method

Pretzel Preparation
  1. In a mixing bowl, combine warm water, active dry yeast, and granulated sugar. Allow to sit undisturbed for 5-10 minutes until frothy.
  2. In a large bowl, whisk together all-purpose flour and salt. Add the activated yeast mixture and melted butter, mixing until a soft dough forms.
  3. Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
  4. Place the kneaded dough into a lightly oiled bowl, cover with a towel, and let it rise in a warm area for 1 to 1.5 hours, or until doubled in size.
  5. Once risen, punch the dough down, divide into 8 pieces, and roll each into an 18-inch rope, shaping into a pretzel.
  6. Preheat the oven to 375°F (190°C).
  7. In a pot, bring 10 cups of water to a boil and stir in baking soda. Boil each pretzel for 30 seconds, then transfer to a parchment-lined baking sheet.
  8. Brush each pretzel with the beaten egg. Mix granulated sugar and ground cinnamon, then sprinkle over the pretzels.
  9. Bake the pretzels for 12-15 minutes, until golden brown.
  10. Let cool on a wire rack for a few minutes before serving.
