Pretzel Preparation
- In a mixing bowl, combine warm water, active dry yeast, and granulated sugar. Allow to sit undisturbed for 5-10 minutes until frothy.
- In a large bowl, whisk together all-purpose flour and salt. Add the activated yeast mixture and melted butter, mixing until a soft dough forms.
- Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
- Place the kneaded dough into a lightly oiled bowl, cover with a towel, and let it rise in a warm area for 1 to 1.5 hours, or until doubled in size.
- Once risen, punch the dough down, divide into 8 pieces, and roll each into an 18-inch rope, shaping into a pretzel.
- Preheat the oven to 375°F (190°C).
- In a pot, bring 10 cups of water to a boil and stir in baking soda. Boil each pretzel for 30 seconds, then transfer to a parchment-lined baking sheet.
- Brush each pretzel with the beaten egg. Mix granulated sugar and ground cinnamon, then sprinkle over the pretzels.
- Bake the pretzels for 12-15 minutes, until golden brown.
- Let cool on a wire rack for a few minutes before serving.

Notes
For best results, ensure the water temperature is warm when activating the yeast. Store in an airtight container to maintain freshness and reheat for the best texture.
