  • 1 cup All-Purpose Flour Substitute with gluten-free flour as needed
  • 1/3 cup Dutch-Processed Cocoa Powder
  • 1/4 tsp Salt
  • 1 tsp Baking Soda
  • 1 cup Semisweet Chocolate Chips Substitute for dark or white chocolate if desired

Equipment

  • Mixing bowl
  • hand mixer
  • Baking sheet
  • parchment paper

Method

Step-by-Step Instructions
  1. Make the Cheesecake Filling: Combine softened cream cheese and powdered sugar using a hand mixer until smooth and creamy. Scoop 16 teaspoons onto a parchment-lined plate and flatten slightly. Freeze for 45-60 minutes until firm.
  2. Prepare Cookie Dough: Preheat oven to 350°F (175°C) and line baking sheets with parchment. Cream butter, light brown sugar, and granulated sugar until fluffy (3-4 minutes). Beat in egg and vanilla until well combined.
  3. Mix Dry Ingredients: In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add to the wet mixture, stirring gently. Fold in chocolate chips.
  4. Assemble Cookies: Scoop about 2-tablespoon-sized balls of dough onto baking sheets. Press frozen cheesecake filling into each dough ball, enclose with dough, and optionally sprinkle extra chocolate chips on top.
  5. Bake: Bake one sheet at a time for 9-12 minutes until edges are set but centers are soft. Cool on the sheet for 5 minutes before transferring to a wire rack.
