Preheat your oven to 425°F (220°C).
In a large bowl, combine the diced sweet potatoes, olive oil, honey, lime juice, chipotle powder, garlic powder, smoked paprika, salt, and pepper. Toss until the sweet potatoes are evenly coated.
Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and caramelized, stirring halfway through for even cooking.
Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro before serving.
