Ingredients
  

  • 2 cups cooked shredded chicken
  • 1 ripe avocado
  • 2 tbsp Greek yogurt or mayo
  • 1 tbsp lemon juice
  • 1/4 cup chopped red onion
  • Salt and pepper to taste
  • 2 tbsp chopped fresh cilantro optional

Method
 

  1. In a bowl, mash avocado and mix with Greek yogurt or mayo and lemon juice.
  2. Stir in shredded chicken, onion, salt, pepper, and cilantro.
  3. Serve immediately or chill.

Notes

  • Great in sandwiches or low-carb lettuce wraps. Adjust lemon to taste for extra brightness.
