This cozy and cheesy Vegetable Casserole is a perfect meatless main or vibrant side, packed with colorful veggies, creamy sauce, and a crunchy topping.

Ingredients
  

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup chopped carrots
  • 1 cup frozen peas
  • 1 small onion chopped
  • 1 can condensed cream of mushroom soup
  • ½ cup sour cream
  • cups shredded cheddar cheese
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup crushed buttery crackers like Ritz
  • 2 tablespoons melted butter

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Steam broccoli, cauliflower, and carrots until just tender.
  3. In a large bowl, mix soup, sour cream, garlic powder, onion, peas, and cheese.
  4. Fold in the vegetables and season to taste.
  5. Pour into dish. Mix crushed crackers with melted butter and sprinkle over top.
  6. Bake for 30–35 minutes until bubbly and golden.

Notes

  • Use fresh or frozen vegetables depending on availability.
  • Swap cream of mushroom for cream of chicken or celery.
