Method
- Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
- In a large bowl, mix rice, chicken, Rotel, salsa, cream of chicken soup, sour cream, 1 cup cheese, cumin, salt, and pepper.
- Pour into the baking dish and spread evenly.
- Top with remaining cheese.
- Bake for 25-30 minutes until hot and bubbly.
- Let sit 5 minutes before serving.
Notes
- Serve with avocado, cilantro, or crushed tortilla chips on top.
- Add black beans or corn for extra heartiness.
