Ingredients
  

  • 1 box Jiffy corn muffin mix
  • 1 can whole kernel corn drained
  • 1 can cream-style corn
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 2 large eggs

Method
 

  1. Preheat oven to 350°F (175°C) and grease an 8x8-inch baking dish.
  2. In a large bowl, mix all ingredients until fully combined.
  3. Pour the mixture into the prepared dish and spread evenly.
  4. Bake for 45–50 minutes, or until golden brown and set in the center.
  5. Allow to cool slightly before serving.

Notes

  • For an extra cheesy version, stir in 1 cup shredded cheddar cheese.
  • Add jalapeños for a spicy kick!
