Method

Step-by-Step Instructions
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground beef, breaking it apart as it cooks for about 5–7 minutes, until no pink remains.
  2. Incorporate 1 chopped medium onion and 2 minced garlic cloves. Sauté for another 3–4 minutes until the onion becomes translucent.
  3. Stir in 3 peeled and diced medium potatoes, coating them well with the beef mixture. Season with 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of paprika, and 1/2 teaspoon of dried oregano.
  4. Pour in 1/2 cup of beef broth, cover, and reduce the heat to low. Simmer for 20–25 minutes or until the potatoes are tender.
  5. Sprinkle 1 cup of shredded cheddar cheese over the casserole. Cover and cook for another 2–3 minutes until the cheese melts.
  6. Remove from heat and garnish with 1 tablespoon of freshly chopped parsley. Serve and enjoy!
