In a large pot, heat the olive oil over medium heat. Add the diced chicken, garlic powder, onion powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
In the same pot, add the orzo and toast it for 1-2 minutes, stirring frequently. This will enhance the flavor.
Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to a simmer and add the broccoli florets. Cook for about 8-10 minutes, or until the orzo is tender and the broccoli is bright green.
Stir in the cooked chicken, cheddar cheese, Parmesan cheese, and heavy cream. Mix until the cheeses are melted and everything is well combined.
Taste and adjust seasoning with more salt and pepper if needed. Serve hot.
